Thanks to an ever-increasing focus on health and good nutrition Macadamia nuts have found a place on menus all over the world.

Our macadamias will add quality and taste to your dishes and snacks. To help you get started, please find below some delicious recipes for your dinner table:

   
Pumpkin and macadamia soup (SERVES 4-6)

1 garlic clove, pressed
4 chicken breasts
100 g green beans (optional)
50 g Macadamia nuts
1 large tomato
4 tbl honey
1/8 tsp Sesame seeds
Macadamia or olive oil
½ sweet pepper

Slice or chop all ingredients. Simmer garlic in oil, until light brown. Add chicken, and sauté for about five minutes. Add the green beans and the red pepper; let simmer for another couple of minutes. Add the tomato and the macadamia nuts; sauté another minute or two. Finally put in the honey and the sesame seeds. Continue cooking just long enough to warm the honey. This dish tastes extra good served with couscous.


   
Quick Macadamia Chicken

100g chopped macadamias
600g diced pumpkin
1 chopped apple
1 Tablespoon of Macadamia or olive oil
1 small onion
6 dl of chicken stock

For garnish: Natural yoghurt, A few roasted Macadamias

Heat oil in a sauce pan, add the macadamias and onion and let it simmer for 2-3 minutes until it is golden brown. Add the apple and pumpkin and cook for a further 2-3 minutes before pouring the stock over. Cover and simmer until the pumpkin is soft (about 20 minutes). Put the mixture in a blender and process until smooth and creamy. Serve hot in bowls with a touch of yoghurt and garnish with a few roasted macadamias.

     
  Curried Macadamia Rice

¼ cup Macadamia nuts, chopped
¼ cup Chicken broth
¼ cup Raisins
½ cup Raw rice
½ cup Chopped white onion
6 tbl Butter
1 tbl Curry powder

Melt butter in a pan, add the raw rice and onion and cook for a few minutes while stirring. Add curry, broth and raisins. Bring to boil under cover.

Reduce heat, simmer for 15 minutes and add nuts. Stir well, cover and simmer for another 5 minutes.

This rice tastes good on its own, but it is also excellent as a side dish to chicken, fish or red meat.

 

   
Strawberries and Cream topped with Macadamia

2 packs of strawberries, halved
1 cup cream
1 tbl sugar
1 cup of chopped unsalted macadamias

Divide the strawberries into 4 to 6 small dessert bowls. Whip the cream with the sugar and put it on top of the berries. Sprinkle the chopped macadamia nuts on top.
